Greek Chicken Pasta Recipe
For a fabulously flavorful dish that takes just minutes to make, simply saute garlic, onion and tender strips of chicken. Add artichoke hearts, tomato, feta cheese, parsley, lemon juice and oregano, and toss with hot pasta.
This is one of my favorite 'stand by' recipes. I keep the ingredients on hand to make a quick, delicious, satisfying meal.
A very good light summer dish. Serve it with sliced fresh tomatoes, feta cheese, and garlic bread.
I wasn't too impressed with the dish at all. I followed the recipe and took in other tips and used canned diced tomatoes and used the artichoke marinate (some, not all otherwise the dish would have been too 'wet'), even added fresh basil, and the saute'ing chicken with half of the required oregano. It was indeed quite bland. I think when I found this recipe, I was searching for 'healthy meals', hence the fresh tomatoes, not canned tomatoes with high sodium. I used diced canned tomatoes with no added salt (50mg of Sodium). I think I would definitely have added: olives, more feta cheese, less of the tomato sauce. I probably would not recommend this to anyone. It was too bland. It's Greek so the consistency should be dry, not 'wet' or 'saucy'.
I really loved this recipe. I did make a few changes like the other reviewers, but kept the essence of the recipe intact. I seasoned the chicken and cooked it separately before I added it to the onions and garlic. I also added some sun dried tomatoes and a little of the oil from them. I used a can of petite cut tomatoes instead of fresh, which made it a little more "saucy." This dish had a wonderful flavor. I will definitely make it again.
Wow, this was AMAZING!!! If you like Greek Salad, you will LOVE this pasta! Both my husband and I thought it was even better than most of the pasta dishes we've had at nice restaurants. I would give it 10 stars if I could.... I made it in my electric skillet and I changed a few minor things. First off, I only used 1/2 pound of pasta. We like our pasta to have more sauce and less noodles and since it's just the two of us, this worked out perfectly. It was nice and moist and it still made enough for us to have leftovers the next day. I used penne pasta, which is our favorite.... The other changes I made were: I used a yellow onion instead of red, I used a can of diced tomatoes (drained) instead of the chopped tomato, I added about half of the artichoke marinade along with the artichokes (for more flavor and liquid), I added 1/2 cup sliced kalamata olives (this made it REALLY yummy!) and I used double the amount of feta cheese (1 cup total). I added 1/2 cup into the sauce and cooked it a little longer th
