Emily's Excellent Taco Casserole Recipe
This is a super speedy dinner I like to make when it is getting late and I haven't cooked yet. Chili, corn chips and cheese are topped with lettuce and tomato. Spice it up with your favorite salsa. Vegetarian chili can be found with the regular chili - it is often labeled as 'fat free'. This recipe can easily be doubled, and cooked in a 9x13 inch baking dish.
The only reason I am giving this a 4 star rating is because I had to altar the recipe. I only added one can of chili and I substituted 1 lb. of very lean ground beef for the other can. I sprinkled ground beef with 1 tsp. of chili powder, 1/2 teaspoon each of gartic and onion powder while I cooked it. This was very yummy and tasted just like tacos!
Good recipe. I used browned ground beef with taco seasoning to get a more authentic taco flavor, and did place the Hint of Lime Tostitos over the meat, then sprinkled with Mexican blend cheese, per suggestion from other reviewers. This is NOT a criticism of the original recipe, just my preference since I'm not fond of beans. Easy to make and very filling. Will definitely make this again.
